nixos/thanos: remove deprecations

Browse source 
* replaced store.grpc.series-sample-limit by store.limits.request-samples
* replaced query.replica-label by query.replica-labels
* replaced store.addresses by endpoints
* removed block-sync-concurrency (removed upstream)
