nixos/paperless-ng: minor improvments

Service:
- Fix misleading comment:
  We could in fact implement password copying as a preStart script by
  amending BindReadOnlyPaths, but adding an extra service is simpler.

Test:
- Add more detailed subtest names
- Simplify date check
